Banh Mi
Succulent chicken served with veg and chilli mayo makes for a delicious Vietnamese roll.
THE RECIPE

Ingredients
- 4 Vietnamese rolls
- 400g chicken breast, halved and sliced
- 2 Tbs light soy sauce
- 40g lettuce, shredded
- 100g cucumber, thinly sliced
- 1 carrot, grated
- 2 spring onions, sliced
- 40g kewpie mayonnaise
- Sriracha
- Coriander, to serve

Method –
- In a small bowl, combine chicken and soy sauce. Heat a large non-stick fry pan over medium-high heat. Cook chicken for 5-7 minutes or until cooked through.
- In a seperate small bowl, combine mayonnaise and sriracha to taste.
- To the roll, add lettuce, cucumber, carrot, spring onion, chicken and top with mayonnaise mixture. Garnish with coriander. Enjoy!
